Vinification of the Kalkmergel Riesling from Knipser Knipser Kalkmergel Riesling is a quality wine cuvée of the finest Riesling wines, mostly in late harvest quality, which Knipser obtains from the best vineyard sites characterized by the Kalkmergel rock. After selective hand harvesting, the grapes are pressed and the must is subjected to cool temperature-controlled fermentation. Half of the grapes are vinified in stainless steel tanks, while the other half is fermented in traditional half-barrels (600l) and one-and-a-half-barrels (900l).
