In Languedoc, the vines that produce the grapes for this wine grow on soils of limestone and gravel. After manual harvesting, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. Fermentation at controlled temperatures follows. The vinification is followed by a maturation of 6 months in oak barrels.
