Vinification of the Terroir Al Limit Terroir Historic Negre Priorat The basis for the balanced Terroir Historic Negre Priorat from Spain are grapes from the Cariñena and Garnacha grape varieties. The grapes grow under optimal conditions in Catalonia. Here, the vines dig their roots deep into slate soils. The ripeness of the grapes for this Cariñena and Garnacha wine is influenced to a large extent by the climate of the growing region. In Catalonia, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well-ripened grapes and a rather high must weight. The grapes for this red wine from Spain are harvested exclusively by hand when they are perfectly ripe. After harvesting, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in large oak barrels at controlled temperatures. The fermentation is followed by maturation on the fine lees for several months before the wine is finally bottled.
