Vinification of Torre di Giano Bianco Torgiano DOC Tenuta di Torgiano by Lungarotti This young white wine is made from Grechetto, Vermentino and Trebbiano grapes grown at Tenuta di Torgiano on clayey, deep soils with optimal structure and good water retention capacity. After the manual harvest, this wine is made exclusively from the so-called Mosto Fiore, the first must, the short cold maceration is followed by alcoholic fermentation at a controlled low temperature in stainless steel tanks, the wine then remains on the fine lees at constantly low temperatures until bottling. The name recalls the origin of Torgiano, a tower on Roman foundations that was once dedicated to the two-headed god Janus. The label depicts the grape harvest, which is depicted in relief on the Fontana Maggiore in Perugia.
