Making the Amarone della Valpolicella from the Tedeschi winery This wine is made from grapes harvested from different vineyards on the slopes of the Mezzane and Tregnago hills of Valpolicella. The different origins of the grapes, which only some individual areas of Valpolicella produce, are crucial to obtaining balanced, well-structured wines. The grapes used for this Amarone della Valpolicella are Corvina, Corvinone and Rondinella (30% each) and a total of 10% other local red grapes Rossignola, Oseleta, Negrara and Dindarella. After the harvest, they undergo the appassimento process in a special drying room for 4 months, with constant humidity control. This is followed by gentle pressing and then alcoholic fermentation and maceration at controlled cool temperatures for 40 to 60 days. The Amarone is then aged for 3 years in Slavonian oak barrels and matures for a further 6 months in the bottle after bottling.
