In San Juan, the vines that produce the grapes for this wine grow on soils of sandstone. At the time of optimal ripeness, the grapes for Syrah San Juan are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the harvest, the grapes reach the winery by the fastest route. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of the fermentation, the Syrah San Juan is allowed to further harmonize on the fine lees for a few months....
