Vinification of the Spice Route Winery Chakalaka Spice Route The starting point for Spice Route Winery's premium and wonderfully powerful Chakalaka Spice Route cuvée is Carignan, Durif, Grenache, Mourvèdre, Syrah and Tannat grapes. In the Western Cape, the vines that produce the grapes for this wine grow on soils of clay and weathered rock. After harvesting, the grapes are taken by the fastest route to the press house. Here they are sorted and carefully ground. Then fermentation takes place in concrete and small wood at controlled temperatures. The fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.
