Vinification of the ULISSE Trebbiano d'Abruzzo DOC The ULISSE line consists of single-varietal wines that impressively demonstrate the fantastic aromas and flavors that are created when indigenous grape varieties grow on the ideal soils for them. The Trebbiano grape variety is one of the most widely cultivated white wine grapes in the world and has a long history. It is believed that this grape originates from the eastern Mediterranean and was already known to the Romans. The selective hand-picking takes place in 10 kilogram containers, cooled by dry ice, the grapes reach the winery undamaged. There they are selected again to ensure an absolutely healthy harvest. The grapes are cooled down to -5°C within 3 minutes using nitrogen. This breaks down the cell structure and promotes extraction, which explains the intense, fascinating fresh and fruity aroma of this wine. Fermentation takes place at a controlled temperature in stainless steel tanks, followed by ageing in the same tanks for a period of 3 months.
