He has finally been able to produce a wine from the autochthonous Sicilian grape variety Nero d'Avola using the appassimento method. In appassimento, the grapes are dried like raisins before processing, which significantly changes their sugar content and aroma. With TANK No 26 , this is not done on straw mats in warehouses, as is the case with the northern Italian Amarone, but directly on the vine. Only the best plots of vineyards near Marsala in northern Sicily, whose grapes are absolutely ripe and undamaged, are selected for this. The vineyards are located in the east of Marsala at an altitude of over 400 meters above sea level.
