Vinification of the Benuara Terre Siciliane IGT from Cusumano This cuvée is made from the Nero d'Avola (70%) and Syrah (30%) grape varieties. After manual harvesting, the grapes are destemmed and fermented for two days at 7°Celsius, fermentation takes place at 26°-28°Celsius with frequent circulation and removal of the must. This is followed by malolactic fermentation in stainless steel tanks with subsequent fining in stainless steel tanks and wooden barrels.
