At optimum ripeness, the grapes for Casalécchio di Sorbo are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in large oak barrels at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally drawn off.
