
Salice Salentino - L'AntesiThe L'Antesi Salice Salentino is a first-class red wine in a glass. It reveals a wonderfully brilliant, purple-red color. This L'Antesi red wine presents the nose with all kinds of mulberries, blueberries, plums, prunes and black cherries. As if that wasn't already impressive, the ageing in small wooden barrels adds further aromas such as cocoa bean, gingerbread spice and cinnamon. This dry red wine from L'Antesi is perfect for people who would prefer 0.0 grams of residual sugar in their wine. The Salice Salentino comes very close to this, as it was vinified with just 3.9 grams of residual sugar. On the palate, this light-footed red wine is characterized by an incredibly dense texture. The Salice Salentino presents itself impressively fresh and lively on the palate thanks to its concise fruit acidity. On the finish, this red wine from the Apulia wine-growing region impresses with its considerable length. There are again hints of plum and damson. Vinification of the L'Antesi Salice Salentino The basis for the first-class and wonderfully elegant Salice Salentino cuvée from L'Antesi are Malvasia Nera and Negroamaro grapes. When they are perfectly ripe, the grapes for the Salice Salentino are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Fermentation then takes place in small wooden vats at controlled temperatures. Once fermentation is complete, the Salice Salentino is matured in oak barriques for a further 6 months. It goes perfectly with roast veal liver with apples, onions and balsamic vinegar sauce, goose breast with ginger-red cabbage and marjoram or ossobuco .
