Vinification of the Alboreto Vino Nobile di Montepulciano from Fattoria della Talosa For this finesse-rich Vino Nobile di Montepulciano, 90% Sangiovese and 10% Merlot are vinified together, which come from vineyards in the Pietrose Montepulciano area and are between 10 and 30 years old. After a careful selection of the grapes, the first and malolactic fermentation takes place at a controlled temperature in stainless steel, in special conical vats. The wine then matures for two years, partly in large barrels and partly in barriques and tonneaux after the first and second passage.
