Once perfect physiological ripeness is ensured, the grapes for the Bardolino Classico are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After manual harvesting, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Once fermentation is complete, the Bardolino Classico can continue to harmonize on the fine lees for a few months.
