Vinification of the Montes Purple Angel from Montes The powerful Montes Purple Angel from Chile is a cuvée, made from the grape varieties Carmenère and Petit Verdot. The grapes for this red wine from Chile, when perfectly ripe, are harvested exclusively by hand . After the grape harvest, the grapes quickly reach the winery. Here they are sorted and carefully ground. This is followed by fermentation in small wood at controlled temperatures. After fermentation is complete, the Montes Purple Angel is aged for another 18 months in French and American oak barriques. It is perfect as an accompanying wine to lamb stew with chickpeas and dried figs, braised chicken in red wine or veal and onion casserole.
