Vinification of the Rotwild Silvaner by Peter Mertes This white wine clearly focuses on one grape variety, and that is Silvaner. Only immaculate grape material was used for this wonderfully elegant varietal wine from Peter Mertes. After the hand harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Rotwild Silvaner can continue to harmonize on the fine lees for a few months. After the wine is finished, the Rotwild Silvaner is carefully harmonized.
