Vinification of the Gewürztraminer Spätlese Südtirol DOC from J.Hofstätter The grapes grow in the vineyards of Tenuta Hofstätter in Tramin on marl soils. The grapes are harvested by hand at the end of November and the overripe and particularly tasty grapes are placed in small crates. In the wine cellar, they are lightly crushed and then gently pressed. After natural sedimentation and clarification, the must ferments in small oak barrels, followed by 12 months of ageing in small wooden barrels and a further 6 months in the bottle after bottling.
