When perfect physiological ripeness is assured, the grapes for Breakaway Pinot Blanc dealcoholized are harvested exclusively by hand without the use of punishing and barely selective machinery. After the harvest, the grapes are immediately sent to the winery. Here they are selected and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. After the end of fermentation, the light-bodied Breakaway Pinot Blanc is aged, de-alcoholized, for a few more months in 500-liter oak barrels. When the wine is finished, the Breakaway Pinot Blanc is carefully dealcoholized.
