Ciavolich Fosso Cancelli Colline Pescaresi IGP Pecorino 0,75 ℓ

The Colline Pescaresi Pecorino Fosso Cancelli by Ciavolich is a white wine that fully reflects the terroir of Loreto Aprutino. It is produced entirely with Pecorino grapes, harvested by hand in small boxes. Crushing and pressing take place using a small crusher-destemmer and an ancient press. The must obtained is transferred partly into terracotta amphora and partly into French oak tonneaux, in which fermentation begins thanks to the pied de cuve technique. Subsequently the wine ages in the same containers for approximately 12 months. The wine appears to the eye of a golden yellow color. On the nose it evokes aromas of hay, dried fruit and chamomile which anticipate a robust and soft palate, with a beautiful flavor. It is ideal in combination with vegetarian first courses and white meats.
