The Alta Langa Pas Dosé Riserva Special Cuvée by Contratto is a classic method sparkling wine made from Pinot Noir and Chardonnay grapes grown on the high hills of Piedmont. The denomination guarantees the origin and excellence of this cuvée, crafted according to strict criteria that express the elegance and structure typical of the territory.After destemming, the grapes are gently pressed to obtain only the free-run must, which ferments in stainless steel tanks at controlled temperature. Pinot Noir is aged in steel for about nine months, while Chardonnay matures in French oak barrels. The secondary fermentation takes place in the bottle, followed by at least ninety months of aging on the lees; remuage is done manually and no dosage is added at disgorgement.It presents a golden yellow color with coppery reflections. On the nose, grassy and citrus notes emerge, enriched by hints of dehydrated apricots, orange blossoms, and thyme. On the palate, it is fresh and very complex, with nuances of toasted hazelnuts and fine pastry, perfectly balanced by a vibrant minerality; the perlage is fine, creamy, and of long persistence.Ideal for accompanying shellfish-based dishes or elegant appetizers.
