
Diego Merseguera Chardonnay DO - Bodega de MoyaThe Diego of Bodega de Moya from the Spanish wine region of Valencia is a wonderful, fresh white wine cuvée from the grape varieties Merseguera (70%) and Chardonnay (30%). The white wines dedicate the winemaker to a man from his family or his closest circle of acquaintances - Diego gave Yves Laurijssens the idea to use the Bobal grape. In the glass, this wine presents a clear straw yellow color with sparkling highlights. The nose reveals expressive aromatics - ranging from quince, juicy apple and ripe apricot, to fresh hazelnuts, toasted almonds and freshly baked bread. Thanks to aging on the lees, the nutty notes and aromas of brioche also continue on the palate. The body is pleasantly full with a soft tannic structure. The finish is fresh, persistent and once again shows the complex aromas thanks to the yeast aging. Vinification of the Diego Merseguera Chardonnay De Moya The vines of Chardonnay grapes and Mersegura grapes are about 25 years old and are located at an altitude of 1050 meters above sea level. The grapes are harvested by hand early in the morning in 15 kg boxes and are already selected in the vineyard. The grapes are then cooled in the cellar for 24 hours at 4 degrees Celsius - cold maceration is also 24 hours. Fermentation at controlled temperature takes place 50% of the must in stainless steel tanks and 50% in French oak barrels. Maturation on the lees takes place for a total of 6 months.
