
The balanced 2020 vintage finds its best expression in DON VINCENZO. Fermentation takes place in small 25-hl stainless steel tanks with indigenous yeasts to bring out the terroir in all its power and distinctiveness. The wine then ages for 18 to 24 months in Allier barriques (12% new, the remainder one-year-old), followed by another 18 months in 35-hl oak barrels. After bottling, it ages in bottle for at least another year. More than any other Casaloste wine, Don Vincenzo encompasses the full range of aromas that the Sangiovese grape variety can develop under the diverse climatic conditions of the years. The seductive nose immediately reveals the wine's great personality: concentrated notes of forest fruits and plums, as well as balsamic and spicy hints such as sweet tobacco, cocoa, and roasted coffee. On the palate, it is extremely complex. The dense tannin structure and the comparatively low acidity ensure harmony, and the wine ends in an almost sweet finish.
