Disobedience - Kaiken Wines

Chef's table shows Francis Mallmann at the grill, quite idiosyncratic, like Kaiken. They celebrate theirs with disobedienceCooperation, friendship, freedom. The wine comes from two different terroirs.Alluvial soils in Vistalba, in the Malbec stronghold of Luján de Cuyo, produce complex, plump wines. InAltamira, in the Valle de Uco, the limestone gives them a fresh, distinctive grape variety character.Disobedience combines both with a lot of manual work, fermentation in concrete and 21 months of maturation: 15 months in barrels(30% new French oak, 70% used barrels), 6 months in bottle.The recipe works! Fruity and spicy on the nose with hints of nuts and graphite, silky on the palatefruity and long with sweet, mature tannins and a hint of dark chocolate.
