Bonpas Très Vieilles Vignes 80 Ans Côtes-du-Rhône AOC 0,75 ℓThe Très Vieilles Vignes from the Bonpas estate is a red wine primarily made from Grenache grapes, alongside Carignan, sourced from vines over 80 years old, in the southern part of the Côtes-du-Rhône designation. The estate's name derives from Bon passage, referring to the safe crossing of the Durance river which once connected Rome to Avignon.The winemaking follows the traditional method of the Rhône Valley with co-fermentation of the two varieties. The pomace is submerged in the must towards the end of fermentation at 25°C to achieve optimal maceration. The long vinification process, lasting between two and three weeks with daily pump-overs, promotes the development of the aromatic bouquet and roundness. Aging continues for eight months in stainless steel and concrete tanks.The nose reveals intense aromas of crushed strawberries and sweet spices. On the palate, the well-developed tannins of the Grenache are combined with the fruity freshness of the Carignan and subtle hints of white pepper. The sip is rich, structured, and generous, with a complex finish in which fine tannins and spicy notes emerge.Ideal paired with roasted leg of lamb, porcini risotto, or beef stew.
