Warm summers with abundant sunshine lead to fully ripe berries. Cool nights preserve vibrancy. The soils are composed of gravel, clay, loess and volcanic basalt. This combination imparts power, spice and a distinctive mineral signature to the wine. The vines of Cabernet Sauvignon, Merlot, Cabernet Franc and Malbec mostly grow in well-drained sites with low yields. This concentrates the aromatics in the berries. Harvest takes place late enough to achieve deep fruit and ripe tannins, but still within a range that retains clear acidity.
