The Rara Neagra by Gitana is a Moldovan red wine produced from Rară Neagră grapes handpicked and selected. This native grape variety best expresses the winemaking tradition of Moldova, offering an intense and harmonious wine, the result of careful work in the vineyard and cellar.Vinification involves maceration and fermentation in oak barrels for a period of 10-15 days, with spontaneous fermentation thanks to indigenous yeasts. The wine matures for at least 12 months in large oak barrels from Krasnodar, under controlled humidity and temperature conditions ideal for malolactic fermentation and the evolution of the wine.On the nose, notes of red fruits, strawberry nuances, and chocolate hints emerge. The taste is intense and complex, with lactic tones due to fermentation in wood, accompanied by well-defined dried fruit and silky tannins.Perfectly pairs with meat-based dishes such as pork fillet, schnitzel, roasted veal, as well as grilled dishes and vegetables.
