Monte Zovo Amarone della Valpolicella DOCG 0,75 ℓAn Amarone originating from the vineyards of Tenuta di Tregnago, in the upper Val d’Illasi, Mezzane di Sopra, and the hills of Tregnago, made from a distinguished blend of traditional Veronese grapes: Corvina (between 55% and 65%), Corvinone (between 25% and 35%), and Rondinella (between 5% and 15%). The marl-limestone soil gives the wine character and personality.Harvest usually begins in the second week of September. The grape clusters are carefully selected by skilled hands and placed in special crates, awaiting the Appassimento process in the drying room at Tregnago. During Appassimento, the grapes rest in the drying room for several months through the winter, during which they gain aromas, color, and especially a rich concentration of sugars. Fermentation takes place in stainless steel tanks, after destemming and crushing of the grapes. Alcoholic fermentation lasts about 20 days at a controlled temperature of 20°-24°C. The wine is then aged in barriques and tonneaux for about 24 months. Following a thorough evaluation, the blend is created in stainless steel, where the wine remains for about 6 months. The final stage is bottle aging, for at least 12 months.Intense ruby red in color, it releases aromas of ripe fruit, cherries in spirit, and intense spicy notes on the nose. On the palate, it is warm and powerful, with refined, rounded tannins.The perfect wine to pair with braised meats, stews, and game; it also pairs wonderfully with a platter of aged cheeses.
