When they are perfectly ripe, the grapes for the Riesling are harvested exclusively by hand without the use of stressful and barely selective harvesters. After the harvest, the grapes are transported to the press house as quickly as possible. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of this process, the Riesling is allowed to harmonize further on the fine lees for a few months.
