Nascetta Cecilia by Cascina Corte is a white wine obtained from Nascetta grapes grown on calcareous and blue tuff soils. The vines, about 8 years old, are trained in the Guyot system and harvested by hand in September.Natural fermentation takes place in terracotta amphorae without the addition of yeast, with manual pump-overs. The wine then matures for 11 months in amphora and a further 2 months in the bottle, without filtration or clarification, thus preserving the expressive purity of the grape variety.To the eye, it shows a white color with straw-yellow hues. On the nose, it offers fruity aromas accompanied by notes of Mediterranean scrub. On the palate, it is frank and full of character, with very delicate tannins that impart sweetness and roundness. The finish is long and persistent, leaving a sensation of fullness and harmony.It pairs perfectly with white meats, fish-based dishes, and cheeses, enhancing the delicacy and complexity of the flavors.
