The bunches are harvested slightly early, to preserve the freshness needed for sparkling wine bases.After gentle pressing, the free-run juice ferments in stainless steel tanks at a controlled temperature. At the end of a short aging period, the wine is transferred to an autoclave where the second fermentation occurs according to the Martinotti or Charmat Method.In the glass, it presents a straw yellow color with greenish reflections and a fine perlage. The bouquet expresses floral notes, citrus hints, aromas of white-fleshed fruit. The sip is fresh, tense, and delicate, with a pleasantly savory finish.Pair with seafood appetizers, vegetable-based first courses.
