La Carta is a Negroamaro Riserva signed by Candido, an emblem of Salento's winemaking tradition. Born from a blend of Negroamaro and Malvasia Nera, it represents a red wine of great elegance and depth, capable of best expressing the character of the region through a robust structure and a refined style.The vinification process involves macerating the grapes for about five days at a controlled temperature. After alcoholic and malolactic fermentation in steel tanks, the wine matures in large barrels, where it develops aromatic complexity and harmony, perfectly integrating the varietal notes with those from the wood.It shows an intense ruby red color that may evolve towards delicate orange highlights. The bouquet is ethereal and complex, with hints of cocoa and leather blending with notes of ripe dark fruit. On the palate, it is soft, enveloping, and well-balanced, with an elegant and persistent tannic texture.It pairs perfectly with roasts, braised dishes, red meat courses, and aged cheeses.
