During the day, the sun provides ripe aromas; at night, the coolness ensures structure and lively acidity. The soil has a high proportion of limestone, interspersed with gravel and some clay. This combination lends the Pinot Noir finesse, tension, and striking minerality. Pinot Noir, known locally as Blauburgunder, ranks among the most demanding grape varieties. In Alto Adige it develops an elegant, taut character. The vine does not yield a powerful fruit bomb, but a focused, multi-layered red wine with depth. The grapes are deliberately kept at a relatively moderate yield so that concentration in the harvested fruit increases and each berry achieves aromatic density. The harvest is carried out selectively, usually in several passes. The growers of Kellerei St. Michael-Eppan already sort in the vineyard. Only ripe grapes reach the cellar. Upon arrival, the harvested fruit undergoes further selection so that only the best berries enter the fermentation vessel. This creates the basis for a Riserva worthy of the name Sanct Valentin. The destemmed grapes go into the fermentation tank, often stainless steel tanks with controlled temperature or traditional fermentation vessels.
