Sancerre grapes grow on the rolling hills surrounding the town of the same name, in the vineyards of Les Caillottes, Les Terres Blanches, and Les Silex, which consist of calcareous clay soils with gravel and, in some areas, flint. Fermentation and aging of the wines take place exclusively in stainless steel tanks, where the Sancerre remains on its fine lees for three to six months before bottling.
