The wine is made from 100% Carignano, which is cultivated in the Sulcis region of south-western Sardinia as a small tree in the old Latin style. The grapes for this powerful, tannin-rich wine thrive perfectly on the sandy, loamy and poor soils. After harvesting and separation from the stems, the grapes ferment in steel tanks at a controlled temperature for around 14 days. During this time, the mash is repeatedly stirred so that the tannins, which are particularly rich in Sardinian Carignano, are transferred to the mash. After fermentation, the Rocca Rubia is transferred to new and two-year-old French barrique barrels, where it is aged for 10 to 12 months.
