The Notte Rossa Salento Rosso is a red wine produced in Puglia by Terre di Sava, in the heart of Salento, from carefully selected indigenous grapes. The warm and breezy climate, together with the alluvial-origin soils, favors optimal ripening of the grapes, enhancing the varietal characteristics and typical expressiveness of the territory.The winemaking process includes temperature-controlled maceration followed by fermentation in stainless steel, to preserve the wine's aromatic freshness and structure. The aging takes place in steel tanks for several months before bottling, without any passage in wood, to maintain the fruity profile intact.On the nose, it opens with intense scents of berries, plum, and ripe cherry, enriched by light herbal and spicy notes. On the palate, it is full and round, with soft tannins and good taste persistence, balanced by a pleasant freshness.It pairs perfectly with grilled meats, flavorful first courses, and aged cheeses.
