The Toscana Rosso Senza Solfiti from Fattoria dei Barbi is a pure Sangiovese, resulting from an innovative project developed in collaboration with the University of Pisa. Born with the aim of completely eliminating added chemicals, this wine represents a new expression of the Montalcino terroir, combining advanced technology and respect for nature.The grapes, sourced from the Fattoria dei Barbi vineyards located at 450 meters above sea level, are hand-harvested and meticulously selected. Fermentation takes place in total absence of oxygen, using Ganimede fermenters saturated with inert gases to protect the must from oxidation. The aging process occurs in steel, with maximum control of the environment to ensure the stability of the wine.With a bright and intense purple-red color, on the nose it offers a fresh and clean bouquet, with notes of small red berries, cherry, and ripe grapes. On the palate, it is fleshy and fruity, with a balsamic acidity that provides balance and pleasantness.Ideal as an aperitif, even slightly chilled, it pairs perfectly with fresh stretched-cheese, cured meats, and grilled vegetables, enhancing their flavors with its lively freshness.
