It is composed of 90% Lambrusco di Sorbara and 10% Lambrusco Salamino, representing a classic and refined expression of this territory, characterized by freshness and drinkability.The production process involves red vinification with temperature-controlled maceration to preserve the varietal notes. The sparkling process follows the Charmat Method, with natural fermentation in an autoclave, ensuring a fine and evanescent perlage and a structure that enhances the grape's aromatic peculiarities.It presents a bright ruby red color with pink highlights, accompanied by a fine and evanescent foam. The aroma recalls violets and wild strawberries, offering a floral and fruity bouquet. On the palate, it is refined and fresh, with pronounced acidity that enhances its savoriness and imparts great overall elegance.Excellent as an aperitif, it pairs perfectly with typical Modenese dishes such as tortellini, passatelli in broth, boiled meats, zampone and cotechino, and is also ideal with fish-based dishes.
