The vineyards are located on mid to higher slopes, often with views over the Adige Valley. During the day, the sun and warm downslope winds provide ideal ripeness; at night, cool temperatures ensure freshness and fine acidity. The Pinot Blanc vines here grow on limestone soils with portions of dolomite and porphyry. These soils store warmth, drain water well and lend the wine its distinctive, cool minerality. Yields are deliberately kept low. This allows concentrated grapes with dense aromatics and firm structure to ripen. Harvesting is selective, mostly by hand, in several passes. Only fully ripe berries make it into the cellar. An early start in the morning preserves freshness and aromas in the grapes. Before processing, there is another check on the sorting table.
