Syracho - Rouvalis Winery

Syracho - Rouvalis WinerySyracho - Rouvalis WineryThe Syracho from Rouvalis Winery presents itself as an impressive white wine with a radiant, rich color that shines in a vibrant golden hue thanks to the diversity of grape varieties. The aromatic profile is shaped by the Viognier grape, which lends the wine a seductive fruitiness. It unfolds a refined bouquet of juicy peach aromas accompanied by a delicate hint of mirabelle. This interplay is complemented by nuances of citrus fruits, green apples and creamy notes, which leave the impression of complex freshness. On the palate, the dryness of the wine is wonderfully balanced by its melting texture, which makes the mouthfeel velvety. The wine offers a pleasant fullness, while the long‑lasting finish with finely integrated fruit aromas delights and ensures a harmonious balance. The freshness, supported by the distinctive acidity of approx. 5.7 g/l, makes it a lively summer wine that remains memorable both in flavor and finish. Vinification of Syracho from Rouvalis Winery The grapes for Syracho grow in the sun-drenched Peloponnese region, in the Peleponnese PGI growing area, on calcareous soils. The Mediterranean climate with warm summer days and cool nights plays a key role in the development of the grapes. The grapes are carefully harvested by hand in order to pick only the ripest and best grapes, which provide the ideal balance of fruit and acidity. The vines are traditionally tended in the vineyard and cultivated in line with sustainable principles. After manual harvesting, the grapes are gently crushed and fermented at controlled temperatures. Vinification takes place in stainless steel tanks at around 14–16 °C. Fermentation on the fine lees, also called sur lie, gives the wine additional fullness and complexity. The minimum five‑month maturation on the lees ensures a delicate texture and makes the wine gracefully velvety. Aging takes place exclusively in stainless steel tanks to preserve the fruit-driven and fresh profile. Winemaking is supported by the use of DIAM TCA-free corks, ensuring the wine remains free from undesirable maturation indicators. The result is a high-quality product with a long finish and lasting freshness that reflects the quality of hand harvesting. This creates a stylish change for any summer evening and turns every dish into a special delight.
