They grow in mineral-rich loess and clay-limestone soils, which give the grape a lot of strength and clear fruit. The hand harvest takes place late and in several passes to obtain optimally ripe, fully aromatic berries. The vinification follows the traditional method of Pétillant Naturel (PetNat), one of the oldest bottle fermentation processes, in which the second fermentation in the bottle occurs naturally without further sugar or yeast additions. After gentle pressing, spontaneous fermentation occurs through the natural yeasts on the grape skins. As soon as part of the sugar is converted into alcohol, the wine is bottled without filtration or sulfur addition. The aging takes place in neutral barrels or stainless steel tanks to preserve freshness and fruitiness. The unfiltered bottling creates an intense mousseux with a slight natural sediment, which shapes the character of this wine and ensures a particularly authentic enjoyment experience.
