Vinification of Chateau Nekresi Iceberg The basis for the balanced Iceberg from Georgia is grapes of the Rkatsiteli variety. The grapes grow under optimal conditions in Kakheti. Here the vines sink their roots deep into soils of volcanic rock and black earth. After being harvested by hand, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After the end of fermentation, Iceberg is allowed to further harmonize on the fine lees for several months.
