Vinification of Sonpuig Estiu by Sonpuig The foundation for the well-balanced Sonpuig Estiu from Spain is grapes from the Cabernet Sauvignon, Callet, Merlot and Tempranillo varieties. The grapes grow under optimal conditions in the Balearic Islands. Here the vines drive their roots deep into limestone soils. The wine berries for this red wine from Spain are harvested exclusively by hand at optimal ripeness. After the harvest, the grapes are brought to the winery without delay. There they are selected and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After the end of fermentation, the elegant Sonpuig Estiu is aged for a few more months in oak barrels.
