Bollinger RD (Récemment Dégorgé) is a Champagne produced by the Maison Bollinger located in Aÿ, in the Champagne region. Made with 71% Pinot Noir and 29% Chardonnay, it comes from 18 selected vineyards, mainly Aÿ and Verzenay for Pinot Noir, and Le Mesnil-sur-Oger and Cramant for Chardonnay. The winemaking involves fermentation entirely in barrels, followed by a long maturation period more than four times longer than the denomination requirements. The wine matures with corks and is marketed a few months after disgorgement, thus maintaining its freshness. The dosage is light, with only 3 grams per liter. This Champagne stands out for its delicious aromas of almond paste, apricot jam, honey and bread, accompanied by fresh hints of bergamot. On the palate, it opens with a rich and precise effervescence, displaying flavors of plum, mirabelle and peach, complemented by citrus notes. The saline finish, combined with the fresh hazelnut, creates a unique persistence in the mouth. It pairs perfectly with Piedmontese hazelnuts and cheeses such as Gruyere and Candelous.
