The grapes grow under optimal conditions in Piedmont. Here, the vines drive their roots deep into marl soils. After the grape harvest, the grapes are brought to the press house as quickly as possible. There, they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After the end of fermentation, the Moscato D’Asti Canelli can continue to harmonize on the fine lees for a few months.
