Vinification of Hans Baer Pinot Noir The foundation for the balanced Pinot Noir from Rheinhessen is grapes of the Spätburgunder variety. The grapes for this German red wine are harvested particularly quickly and at the coolest possible time of day once optimal ripeness has been ensured, in order to preserve their aromas. After harvesting, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally bottled. Food recommendation for Hans Baer Pinot Noir This red wine from Germany is best enjoyed at a tempered 15–18°C.
