The first nose of this cuvée of Cabernet Sauvignon and Dornfelder enchants with ripe fruit notes reminiscent of black currant, blackberry and other black fruits. Spicy notes from barrel aging and floral nuances of lilac and violet perfectly round out the bouquet of the Cuvée Gaudenz. On the palate, Knipser's Gaudenz proves to be a perfect blend of power and elegance. The ideal alternative to Pinot Noir is wonderfully aromatic and full-bodied. Harmonious tannins and a pleasantly dry mouthfeel make this Palatinate cuvée an excellent food companion, but it also cuts a super figure solo. Vinification of the Cuvée Gaudenz by Knipser This classic from Knipser's red wine portfolio is vinified from Cabernet Sauvignon and Dornfelder. After harvesting, maceration and fermentation, the Gaudenz is aged for a whopping 18 months in used barriques. The Cuvée Gaudenz is a tribute to Gaudenz Knipser, in the 16th century city builder and council member in the South Tyrolean city of Merano. The Knipsers' family coat of arms, which is still used today, also dates from this period in South Tyrol, showing the year of appointment - 1582 - and was awarded by Archduke Ferdinand in Innsbruck.
