Vinification of the Lagar de Cervera Pazo De Seoane By hand, the grapes are harvested and immediately brought to the winery of Lagar de Cervera. The grapes are vinified separately. The grapes are de-stemmed, cooled to 10 degrees and macerated for 10 hours. The berries are then gently pressed and fermented in stainless steel tanks. This white wine does not undergo malolactic fermentation. This wine is aged on its lees until bottling.
