The grapes grow under optimal conditions in the Western Cape. Here, the vines drive their roots deep into slate soils. After being hand-harvested, the grapes are brought to the winery without delay. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and small wooden barrels at controlled temperatures. After fermentation is complete, the powerful Cape of Good Hope Riebeeksrivier Chenin Blanc is aged for a further 7 months in French oak barrels.
