Vinification of Monte Zovo Soave The basis for this elegant Soave from Veneto is grapes from the Garganega and Trebbiano varieties. After the grape harvest, the grapes are immediately brought to the press house. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally drawn off.
