The fruit intensifies, pear and apple seem almost creamy, yet a beam of citrus provides taut freshness. A subtle note of almond and a hint of brioche point to aging on the fine lees without weighing the wine down. A lively, cool minerality brings a sense of mountain air and rock. On the palate, the Schulthaus Weissburgunder DOC - Kellerei St. Michael-Eppan shows a crisp, clear texture. The opening is juicy and direct, the acidity precise and taut, yet always finely integrated. Pear and ripe apple unfold broadly on the tongue, lemon and grapefruit peel add tension. The vineyards of Kellerei St. Michael-Eppan lie on slopes with cool downdrafts from the mountains and large temperature differences between day and night. On mineral-rich limestone and gravel soils, Weissburgunder matures to great elegance and clarity. From this constellation arises a wine with fresh acidity, fine spiciness and distinctive minerality. The grape variety Weißburgunder, known internationally as Pinot Bianco, shows one of its finest sides in South Tyrol. The vineyards lie at medium altitudes, where warm days and cool nights provide ideal ripening. Calcareous soils with gravel and partly morainic rock ensure drainage and lend the wine its mineral stamp. The varietal Weissburgunder here shows the connection between alpine climate and traditional winegrowing culture. Harvesting is selective, usually in the cooler morning hours. In this way, the grapes reach the cellar fresh and aromatic. Only ripe grapes are processed. The winery places great value on precise work in both vineyard and cellar in order to show the origin clearly in the glass. In the cellar, the grapes are first gently destemmed. This is followed by a soft pressing to extract only the fine must. A short period of skin contact brings additional aromas from the berry skins without emphasizing bitter substances. The clear must then flows into stainless steel tanks, where temperature-controlled fermentation begins. The fermentation temperature remains cool so that the fresh fruit aromas of pear, apple and citrus are preserved. During fermentation, the yeast works quietly and evenly, resulting in a clean, clear aroma profile. After fermentation is complete, the wine matures on the fine lees. This lees phase gives it more substance, delicate nutty notes and a fine creaminess.
